Since 2020, the new generation has ensured the continuity of the Refuge des Gourmets.
The Chef Hubert Chanove, his wife Fanny and their team have taken over from the first generation within a generous terroir between lakes and mountains.
In Machilly, le Refuge des Gourmets decided to glorify the emblem of the village: the raspberry. The little red fruit is prepared from starter to dessert in a dedicated menu very much appreciated; a subtle and naturally perfumed high quality menu.
A family history between passion and transmission
Since 1989, the story of Refuge des Gourmets has been based on a foundation of work and commitments initiated by Florence and Jean-Marie Chanove. The couple went through thirty years of passion for gastronomy and transmitted their values to their son.
It is Hubert's turn to perform his score on the family piano alongside Fanny and their team. Together, they promote the alliance of different professions, from service to cooking, including sommellerie.
Always attentive, the young couple combine their respective sensibilities, skills and complementarities to offer you the best. Thanks to them, the Michelin star obtained in 2016 will shine for a long time to come.

THE CHEF Hubert.
Born in Thonon-les-Bains, Hubert grew up in Machilly, within his family working at the Refuge des Gourmets. Passionate about cooking from a young age, trained by hotel schools in the region, he left his native village to complete his training with great starred chefs across France.
In March 2014, he made the choice to return to his village. Father and son performed their score with four hands, and two years later, they won their first Michelin star: a consecration for the whole team.
In 2017, the family grew with the arrival of Fanny, companion to the young Chef and room manager.
Who knows if the history of the Refuge des Gourmets will continue to be told with the third generation? The future will tell.

To magnify it all, just for your happiness at table, Fanny brings multiple finds to this culinary universe: a choice of cheeses gleaned from her meetings with cheese makers in the region, high quality coffees, and herbal teas with fresh or dried plants.
